We are unable to offer new season oil, but we still have a limited amount of oil from the 2022 harvest

OLIVE OIL STATEMENT
It is said that you do not make Extra Virgin Olive Oil, you find it.
If so, Paolo Carlesi can justifiably be proud of the Extra Virgin Olive Oil he finds. He guarantees that our olive oil is not only 100% Tuscan Olive oil, but it is also made from 100% handpicked Il Piano olives.
Il Piano has approximately 1,500 olive trees, with a traditional Tuscan varietal mix of Moraolo, Leccono, Frantoio, and a small amount of Pendolino. With an annual production of 30-40 quintali each year.
The olives are picked by hand from the trees, starting usually at the end of October. Then the olives are taken to the local Frantoio (olive mill) to be pressed.
With a First Cold press and acidity below 0.8%, Paolo’s olive oil is of the highest quality. Using mostly green olives, his oil is grassy, herbaceous, and pungent with the peppery, Picante sensation beloved by the Tuscans.
Explanation of Extra Virgin olive oil:
Extra Virgin Olive Oil is essentially oil “fresh squeezed” from the fresh fruit of the olive tree. Without alteration of the colour, taste, nutrients or vitamins. It is 100% natural, with NO additives.
It must be the first time the olives are pressed, they must be cold-pressed i.e. below 80F (26C) but the cooler the better, and a maximum acidity of 0.8%, although the lower the acidity, the better quality the oil will be.

This makes for better value when shipping because both bottle sizes are shipped at the same rate, i.e. the cost of shipping a bottle of wine.
Bag in Box
This is a fantastic way to store your olive oil and helps ensure its high quality is maintained longer.
The cardboard box helps insulate the oil and reduce temperature fluxations. Olive oil should be kept in a cool space. Don't keep your oil by the stove! The box also keeps your oil in the dark, light causes the oil to deteriorate, hence why olive oil is always sold in dark green bottles.
The main benefit of the bag is it keeps the air out and prevents the oil from oxidising.
